Blackberry Lavender Gelato

INGREDIENTS:
172.44 grams Blackberry Lavender WONF
244 grams milk
238 grams cream
3 egg yolks
50 grams sugar
1.08 grams vanilla extract


METHOD:
Combine milk, cream, vanilla and Blackberry Lavender WONF and bring to boil. Whisk yolks and sugar to pale yellow color.
Temper yolk mixture with cream mixture and combine.
Churn in gelato maker until frozen and smooth.
