INGREDIENTS:
277.75 grams Northwest Naturals Mango Purée, 28 Brix
197.51 grams Tree Top Pear Juice Concentrate, 70 Brix
123 grams Northwest Naturals Mango Juice Concentrate WONF, 32 Brix
12.34 grams Northwest Naturals Orange Juice Concentrate
987.55 grams Tree Top IQF Golden Delicious Apple Wedges
2.01 grams butter flavor
1.3 grams carmel sugar powder
0.86 grams maple flavor
0.68 grams sea salt
0.46 grams mango flavor
0.46 grams ground allspice
0.46 grams tetra plus starch
0.4 grams vanilla flavor with caramel color
0.4 grams natural apple flavor
0.37 grams Ticazan rapid 3 gum powder
0.31 grams ground cinnamon
METHOD:
In a small mixing bowl, mix all dry ingredients with flavors. Blend
in starch and gum. Set aside. In a large mixing bowl, mix together
mango puree, pear juice concentrate, mango juice concentrate, and
orange juice concentrate. Slowly whisk in dry ingredients. Heat
over medium and fold in apples. Simmer covered for 15 minutes, stirring
regularly. Remove from heat and place in an ice bath to cool.
