Ice cream (derived from earlier iced cream or cream ice) is a sweetened frozen food that is usually made from dairy products, such as milk and cream, and often combined with fruits or other ingredients and flavors. It is typically sweetened with sucrose, corn syrup, cane sugar, beet sugar, and/or other sweeteners. Typically, flavors and colors are added in addition to stabilizers.
The global ice cream market is big business – the US ice cream market alone reached $10.8 billion in 2015, with the average American eating almost 17 liters. Seven in 10 US adults agree that ice cream and frozen treats are indulgent, but 73% also say ice cream and frozen treats can fit into a healthy diet. US manufacturers are taking advantage of that perception with better-for-you (BFY) innovations that use fruit juices as well as some vegetable juices. In addition to their produce base, these products tout their low calorie count, reduced fat and specific vitamin content.
Although Vanilla is the most popular ice cream flavor in US, fruit flavors are not that far behind. Strawberry, Raspberry, Cherry, and other fruits are examples of popular ice cream flavors. Northwest Naturals offers variety of fruit juice blends that could be added to the neutral (without any added flavors) dairy base for desired flavor profile ice cream. Our blends consist of fruit juice concentrate as a sweetener, flavors, acids, and if necessary, colors. It’s tailored to be as easy as Juice Blend + Dairy Base = Ice Cream!
