- 193.88 grams Tree Top Apple Juice Concentrate, 70° Brix
- 73.86 grams Northwest Naturals Pineapple Juice Concentrate, pulpy, 60° Brix
- 13.85 grams Northwest Naturals Orange Juice Concentrate, 44° Brix
- 9.23 grams Northwest Naturals Lime Juice Concentrate, 44° Brix
- 286.2 grams filtered water
- 83.09 grams sambal, puréed fine chili sauce
- 36.01 grams Thai fish sauce
- 1.48 grams starch
- 0.92 grams ticazan rapid 3 gum powder
- 0.74 grams kosher salt
- 0.46 grams cilantro
- 0.28 grams lemongrass
Prep Instructions
In a small mixing bowl, blend all dry ingredients with flavors (except cilantro). Set aside. In a large mixing bowl, mix together apple juice concentrate, pineapple juice concentrate, orange juice concentrate, lime juice concentrate, water, chili sauce and fish sauce. Heat over medium and slowly whisk in dry ingredients. Simmer covered for 5 minutes, stirring regularly. Remove from heat and place in an ice bath to cool, stirring regularly. Fold in cilantro last to keep color.
